This Pav Bhaji – Indian curry is one of my favorite Indian-inspired dishes. This recipe is a super delicious curry which is prepared using mixed vegetables and is served with homemade warm rolls, known as pav, which are toasted in butter. It’s easy to make this recipe vegan by using a vegan alternative to butter.
To make this, start by cooking potatoes and vegetables. Sauté onions and garlic and season using cumin seeds, pav bhaji masala, and chili powder. Add water to make the sauce and cook. To make the toasted bread rolls, combine butter with chili powder and chaat masala. Brush the buns with the butter mixture and toast on a hot pan. Serve all parts of the dish on a serving platter and enjoy.
To make my Pav Bhaji – Indian curry, you will need the following ingredients:
Peel 3 potatoes and dice them into cubes. Place the potatoes in a microwave-safe bowl and sprinkle them with water. Cover the bowl with a lid. Microwave for 3 minutes.
Add chopped bell pepper, tomatoes, green peas and continue to microwave for another 3 minutes. Remove the bowl from the microwave and set aside.
Heat butter or vegetable oil in a pan and add 1 teaspoon of cumin seeds. Cook for a few seconds before adding ¾ cup of onions, 3 finely chopped garlic cloves, and salt and sauté until the onions turn translucent.
Add 1 - 1½ teaspoons of red chili powder and cook for 1 minute. Reserve 1-2 tablespoons of the spicy onion mix to serve as a spicy side for the curry.
Add all cooked vegetables and mash everything together. Add 1-2 teaspoons of pav bhaji masala, salt to taste and water to create your desired consistency. Bring the dish to boil. Taste and adjust seasoning.
Remove the pot from the heat and stir through 2 tablespoons of chopped cilantro leaves.
Combine melted butter with red chili powder and chat masala in a small bowl. Mix well.
Heat a non-stick pan and brush each pav / roll with the butter mixture. Place the buttered rolls on the pan to toast them.
On a serving plate add the curry on one side. Garnish the curry with cilantro leaves and butter. On the other side of the serving plate, arrange the toasted bread, chopped onions, lemon slice, cilantro leaves, and ½ a tablespoon of the reserved sautéed spicy onion mix.
