Ingredients

For the crumb topping
⅓ cup Brown sugar packed light or dark
1 tbsp Granulated sugar
1 tsp Cinnamon ground
¼ cup Butter unsalted ,melted
⅔ cup All-purpose flour
For the muffins
½ cup Butter unsalted , softened to room temperature
½ cup Brown sugar packed light or dark
¼ cup Granulated sugar
2 Large eggs room temperature preferred
½ cup Yogurt
2 tsp Vanilla extract
1 ¾ cups All-purpose flour
1 tsp Baking soda
1 tsp Baking powder
½ tsp Cinnamon ground
⅛ tsp Ground Allspice
½ tsp Salt
3 tbsp Milk
1 ½ cups Peaches peeled, chopped
For the glaze
1 cup Confectioners' sugar
3 tbsp Heavy cream (or milk for a lighter texture)
½ tsp Vanilla extract

They are bursting with peachy juiciness and topped with a crunchy streusel.  Streusel is a crumbly topping usually made with flour, butter, and sugar. It is often baked on top of muffins, pies and cakes to give them a crunchy texture.

Start these muffins by combining sugar, cinnamon, butter and flour to make the streusel topping. Then make the muffins. While the muffins are cooking, prepare the glaze by whisking the confectioner’s sugar, cream (or milk) and vanilla extract. Drizzle the glaze over the muffins while they are still warm.

Heat the oven and prepare a muffin tray

Preheat the oven to 425 °F. Lightly spray muffin pan with cooking spray.

Make the streusel topping

Mix brown and granulated sugar with the cinnamon, and melted butter in a baking bowl. Gently stir in the flour. Set the thick and crumbly topping to one side.

Cream the butter and sugar

Beat the butter in the bowl of a stand mixer on high speed using the paddle attachment. When it is smooth and creamy, add the brown and granulated sugars and continue to beat on high for about 2 minutes until fully creamed.

Add eggs, yogurt, and vanilla extract

Mix in the eggs, yogurt, and vanilla extract, scraping down the sides as required. Beat for a minute on medium speed. Then turn the speed up to high and mix until you have a smooth batter.

MIx the dry ingredients together

Combine the flour, baking soda, baking powder, cinnamon, all-spice, and salt in a large bowl.

Add the wet ingredients to the dry

Pour the batter into the flour mixture and gently whisk together. Add the milk and continue whisking until fully combined and few lumps remain.

Fold in the peaches

Gently stir the peaches through with a wooden spoon or spatula.

Add the batter to the muffin tray

Spoon the batter into the muffin tray. Evenly fill each muffin cup to the top. Sprinkle the streusel topping onto the top of each muffin and press it down so that it sticks to the batter.

Bake for 5 minutes at 425 °F. Then reduce the temperature to 350 °F and bake for 15-19 minutes until a toothpick inserted comes out clean.

Make the glaze

While the muffins are cooling, combine the confectioner’s sugar, cream (or milk) and vanilla extract. Drizzle the glaze over the muffins while they are still warm.
