Preheat the oven to 400 °F and line a 9x5-inch loaf pan with parchment paper, covering the sides with about 2 inches of excess paper and then lightly grease with cooking spray.
Roll out 1 tube of pizza dough onto a lightly floured surface and cut into 28, 1x2-inch rectangles.
Brush over the dough rectangles with some barbecue sauce and place a cocktail weiner on top of each one. Wrap the dough to fold over the wiener and pinch the sides to seal. Repeat with the remaining 28 rectangles.
Transfer the “pigs in a blanket” to the prepared baking pan, standing upwards and bake in the preheated oven for about 30 minutes.
Top with sprinkles from ¾ cups of mozzarella cheese and return to the oven to bake for another 5 minutes until the cheese has melted.
Cool for about 5 minutes before removing from the pan to serve. Sprinkle with fresh parsley and enjoy warm with some extra barbecue sauce for dipping.
