
Piri-Piri Chicken is a spicy Portuguese chicken dish which is popular in all parts of the country. On my first day in Portugal, the receptionist at our hotel told us about a restaurant nearby which served the most legendary piri-piri chicken. We went along for dinner that night and the chicken was sensational! I asked for the recipe which the waiter provided and this chicken dish has been a firm favorite in my house since!
Start by making a spicy marinade from chilis, herbs and spices. Using a small knife, score the chicken all over with 1 cm deep cuts. Make sure you slice into the legs and the underside of the chicken. Rub in the marinade all over the chicken and leave to marinate for a minimum 4 hours. Roast in the oven and crank up the heat for the final 30 minutes or so. Enjoy the chicken with your favorite side dishes.
To make my version of Piri-Piri Chicken, you will need the following ingredients:
Place 6 red chilis, 6 cloves of garlic in a food processor with the soaked dried chilis and vinegar. Blitz until combined before adding 2 teaspoons of smoked paprika, 1 teaspoon each of oregano, thyme and sugar, a pinch of salt and the juice of two lemons. Blitz until you have a paste and set to one side.
Preheat the oven to 355 °F.

Great piri piri chicken I've only had somehting like this once when visiting a friend from portugal but this brought back some good memories and now i can have it any day too thanks to you guys :)
