Poaching is my new favorite way to cook salmon. It takes only 5 to 6 minutes of cooking time, and the whole dish is ready in less than 20 minutes. There is only one rule when cooking fish: don’t overcook it.
To make the Poached Salmon with Cucumber Yogurt Salad, you will need the following ingredients:
In a pot, heat 2 cups of water. Add in ½ a sliced lemon, 1 quartered onion, 2 cloves peeled garlic, and 2 tablespoons olive oil and bring to a boil. Then reduce heat and simmer for 6 minutes.
Meanwhile, season the salmon with coarse salt.
Gently lower the salmon fillets into simmering liquid and reduce heat to a very gentle simmer. Cover and cook for about 5 minutes or until the salmon is opaque throughout.
Meanwhile, mix ½ a cup of Greek yogurt, 3 tablespoons lemon juice, 2 sliced cucumbers, 2 tablespoons chopped fresh dill, and half of sliced green onions in a small bowl. Season with salt and black pepper to taste.
Once the salmon is cooked, using a wide slotted spatula, remove it from the liquid.
Serve the poached salmon with cucumber yogurt salad. Sprinkle over the remaining green onions and enjoy!
