In a skillet, over medium-high heat, heat oil and add the pork slices. Cook for 2 minutes on each side and then remove from the pan and keep warm.

In the same skillet, increase the heat to high and add 2 teaspoons thyme to the drippings and cook for 30 seconds.

Add the wine, salt and black pepper and cook for 2 minutes until the liquid evaporates. Gently scrape the bottom of the pan to loosen browned bits.

Add the stock, pork slices and cherry and cook for 8 minutes, stirring occasionally until the sauce has reduced to about ½ cup.
