As the name suggests, this Potluck Taco Casserole is the perfect dish to bring to your next potluck dinner. Everyone will adore this delicious Mexican-inspired casserole. It’s so simple to make, too, as the recipe uses a pre-made biscuit mix. 

To make this delicious Mexican inspired casserole, start by cooking beef over medium heat, crumbling as it cooks. Once cooked, drain the excess oil from the pan. Add taco seasoning and mix well. Transfer the meat mixture to a prepared baking dish. Prepare biscuit mix and pour over the meat mixture. Bake in the oven until golden brown. Cool slightly before spreading sour cream over the top and sprinkling with lettuce, tomato, green pepper, onions, and cheese.

Heat oven and grease baking dish

Preheat the oven to 400 °F and lightly grease a 13x9-inch baking dish.

Brown beef

Heat a large skillet over medium heat and cook 2 pounds of ground beef for 10-12 minutes, crumbling as it cooks. Drain any excess oil from the skillet.

Add taco seasoning

Add 2 sachets of taco seasoning to the meat and cook according to the package directions.

Transfer meat to baking dish

Transfer the meat mixture to the prepared baking dish.

Prepare biscuit mix

Beat 4 large eggs with Âľ cup of milk in a large bowl. Stir in biscuit mix and season with a dash of pepper.

Top meat with biscuit
