This pumpkin season is going to be out of control with this Pumpkin Alfredo Pasta that you and all pumpkin lovers are just going to love.
Have your meal ready in under 30 minutes with this extra creamy, extra cheesy, butter, garlic and cayenne pepper with pumpkin, pasta recipe. You may even want to double up the servings because it’s just that good!
To make Pumpkin Alfredo Pasta, you will need the following ingredients:
Bring a large pot of salted water to a boil.
In a large, wide, saute pan, melt the butter and add garlic. Cook, stirring frequently, for 2 minutes until garlic is softened and very fragrant.
Add pumpkin and cook while stirring for 3 minutes, until the excess moisture cooks away.
Add heavy whipping cream, salt and cayenne pepper, if using and stir to combine everything. Simmer until sauce has thickened.
Add cheese and stir to melt into the sauce. Keep sauce warm over a very low heat while continuing.
Once water in boiling, add pasta and cook according to package instructions, until al dente as pasta will continue cooking in the hot sauce. Before draining the liquid, reserve 1 cup of cooking water to thin out the sauce, if needed.
Toss cooked pasta with the hot sauce and add cooking liquid, as needed. Season to taste and garnish with Parmesan and freshly ground black pepper.
Serve and enjoy immediately!
