I love these Pumpkin Chocolate Chip Bars in fall. My kids adore them too. These bars are rich and tasty and little chunks of chocolate elevate these pumpkin bars to a new level. If you try these, I know you will love them as much as I do!
To make these dessert bars, start by combining the dry ingredients in a large bowl. In a separate bowl, beat butter and sugar until light and fluffy. Add egg, vanilla, and pumpkin before incorporating the dry mixture. Once a batter forms, fold in chocolate chips and transfer to a baking dish. Sprinkle some extra chocolate chips over the top. Bake in the oven and once cool, slice into bars. Yum!
To make Pumpkin Chocolate Chip Bars you will need the following ingredients:
Preheat the oven to 350 °F. Grease and line a 13x9-inch baking pan with parchment paper.
In a mixing bowl, whisk 2 cups of all-purpose flour, 3 teaspoons of pumpkin pie spice, 1 teaspoon of baking soda, and ¾ teaspoons of salt.
Place 1 cup of unsalted butter, ¾ cup of granulated sugar, and ½ a cup of brown sugar in a large bowl. Cream the butter and sugars together until light and fluffy using a hand mixer.
Mix in 1 large egg and 1½ teaspoons of vanilla. Blend in 1 cup of pumpkin.
Mix in the flour mixture. Once the batter forms, fold in all but 3 tablespoons of the chocolate chips.
Transfer the batter into the prepared pan and spread out evenly. Sprinkle the remaining 3 tablespoons of chocolate chips on top of the batter.
Bake in the oven for 30-35 minutes until a toothpick inserted in the center comes out clean.
Remove the bars from the oven and leave to cool completely in the pan.
Cut into squares and serve.
