These Pumpkin Sugar Cookies are the best cookies you’ll make this Fall. You can either use fresh or canned pumpkin purée with some pumpkin pie spice for your sugar cookie base; and we like to make ours with a cinnamon and vanilla, cream cheese frosting to top the treats. Perfect with a cup of chai tea or latte for that Autumn afternoon, at home!
To make Pumpkin Sugar Cookies, you will need the following ingredients:
Preheat oven to 350 °F and line two large baking sheets with baking parchment paper.
In a large bowl, stir the flour, baking soda, pumpkin pie spice and salt together.
In a separate bowl, using a hand mixer, beat the sugar, butter, pumpkin purée, egg and vanilla extract until combined.
Mix all ingredients together until just combined. Don’t over mix.
Scoop one tablespoon of cookie dough per cookie and roll in sugar. Repeat with remaining dough and arrange in rows, 2-inches apart, on the lined baking sheets.
Bake in preheated oven for about 10 minutes until lightly golden. Remove from the oven and cool completely before frosting.
In a small mixing bowl, whisk the cream cheese, powdered sugar, vanilla extract and kosher salt together, for the frosting.
To serve, frost each cooking with prepared cream cheese frosting and sprinkle with ground cinnamon.
