To make Quinoa and Chickpea Stuffed Tomatoes, you will need the following ingredients:
In a medium pot of boiling water, cook the quinoa according to the package instructions.
In a large bowl, combine the quinoa, chickpeas, cucumber, corn, onion, radishes, garlic, dill and parsley. Squeeze some lemon over the top and mix again.
In a small bowl, mix together the olive oil, red wine vinegar, dijon mustard, salt, black pepper and dried oregano.
Pour the dressing over the salad and mix again. Add salt as needed.
Cut off the tops of the tomatoes, using a sharp knife and scoop out the inside seeds and bits, using a spoon. Lightly add salt and pepper to the inside of the tomatoes before stuffing with the quinoa salad.
Serve just as is.
