1½ cup Vegetable stock
¾ cup Quinoa rinsed
1 pound Italian sausage turkey sausage links, casings removed
1 Red pepper medium sweet, chopped
1 Green pepper medium sweet, chopped
¾ cup Onion chopped sweet
1 clove Garlic minced
¼ tsp Garam masala
¼ tsp Black pepper

The name Quinoa Unstuffed Peppers may sound confusing but there is nothing confusing about how good this Israeli inspired dish really is.

Instead of the usual, more common recipe, of giant red and green peppers stuffed with a rice and ground meat mixture, I have unstuffed the peppers, chopped them and added them to the mix with quinoa, Italian sausage and the perfect amount of seasonings.

Steps to make Quinoa Unstuffed Peppers

Cook quinoa

In a small saucepan, bring 1½ cup of vegetable stock to a boil and then add ¾ cup of rinsed quinoa. Reduce the heat and simmer, covered, for about 12-15 minutes until all the liquid is absorbed. Remove from heat.

Cook meat mixture

In a large skillet over medium-high heat, combine 1 pound of crumbled turkey sausage, 1 chopped sweet red pepper, 1 chopped green pepper and ¾ cup of chopped sweet onion. Cook for 8-10 minutes until no longer pink.

Add garlic and seasoning

Add 1 clove of minced garlic, ¼ teaspoon of garam masala, ¼ teaspoon of pepper and ⅛ teaspoon of salt. Cook while stirring for about 1 minute until fragrant.

Add quinoa

Stir in the cooked quinoa and mix well.

Serve

Serve hot and enjoy!
