½ tsp Vanilla

2 Eggs beaten
½ cup + 2 tbsp All-purpose flour

For the cheesecake filling
1½ cups Heavy whipping cream
8 oz Cream Cheese softened
¼ cup Granulated sugar
For the topping
3 (6 oz) containers Raspberries
Chocolate syrup to taste
1 tbsp Chocolate chips mini

These Raspberry Brownie Cheesecake Trifles are a deliciously rich chocolate dessert which is very simple to prepare. Raspberries and chocolate are a match made in heaven and this recipe is a great way to showcase this delicious flavor combination. 

Start by making a typical chocolate brownie batter and bake it in the oven. Leave to cool before slicing into cubes which will form a layer of the trifle. Make a cream cheese filling by whipping sugar, cream cheese and heavy cream together. To assemble the trifle, place a layer of brownie at the base of a trifle dish. Scatter raspberries over the brownie layer and spoon or pipe a layer cream cheese on top. Repeat until you have used up all of the ingredients.

Heat the oven and prepare a pan

Preheat the oven to 350 °F. Line an 8 by 8-inch baking pan with foil and lightly oil with cooking spray.

Make brownie batter

Whisk 1 cup of sugar and ⅓ cup of cocoa powder together in a large mixing bowl. Add ½ a cup of melted butter, ½ teaspoon of vanilla and ⅛ teaspoon of salt. Beat in 2 beaten eggs and mix in ½ a cup plus 2 tablespoons of flour until just combined. Finally, mix in ½ a cup of chocolate chips.

Transfer the brownie batter to the baking pan and bake for 27-30 minutes, until a toothpick inserted comes out clean.

Cool brownies

Cool the brownies to room temperature before slicing into ½-inch cubes.

Make cheesecake filling

Beat 8 ounces of cream cheese and 1 cup of sugar together using an electric hand mixer. Slowly drizzle in 1½ cups of whipping cream while mixing constantly. Beat until stiff peaks form.

Assemble the trifle

Place a layer of brownie cubes in the bottom of a trifle dish. Sprinkle over some fresh raspberries and spoon or pipe a layer of the cream cheese filling on top. Repeat until all of the remaining ingredients are used.

Serve

Drizzle the trifle with chocolate syrup and sprinkle chocolate chips over the top before serving.
