It is so simple to make this delicious dish. Start by placing lemon slices in a single layer on a baking pan. Sprinkle with thyme sprigs and olives. Cut each potato in half and place in a large bowl. Cover the potatoes with water and microwave until tender. Drain the potatoes and scatter them around the edge of the pan. Place the cod fillets on the lemon slices. Drizzle the whole dish with olive oil and season with salt and pepper. Transfer the dish to the oven and roast until fish is cooked through. Serve with the potatoes and olives. Yum!
To make Roasted Cod with Olives and Lemon, you will need the following ingredients:
Preheat the oven to 450 °F.
Place 3 sliced small lemons in a single layer in a baking pan. Sprinkle with 8 thyme and 20 olives.
Cut each potato in half and place them in a large bowl. Cover with water and cook for about 10 minutes in the microwave until tender.
Drain the potatoes and place them around the edge of the baking pan with the lemons.
Place 6 cod fillets on the lemon slices and drizzle the fish and potatoes with 2 tablespoons of olive oil.
Season to taste with salt and pepper.
Reduce the oven temperature to 325 °F and roast the cod for 25 minutes until cooked through.
Serve immediately.
