Ingredients

3 cups Grapes seedless red or green grapes, halved lengthwise
2 tbsp Rice vinegar or sherry vinegar
2 tbsp Olive oil
½ tsp Salt
¼ tsp Black pepper freshly ground
1 tsp Orange zest grated
24 slices French baguette cut diagonally into ½-inch thick
½ cup Cheese Manchego or Romano cheese, shaved
Basil fresh leaves, thinly sliced

Roasted Grape Crostini

The sound of a Roasted Grape Crostini might sound strange to some, but to me, it’s mouth wateringly good. Instead of using a more common ingredient such as cherry tomatoes, I decided to switch things up and roast purple grapes instead. Toss either red or green grapes, I prefer red, with sherry or rice vinegar, olive oil, salt, pepper and freshly grated orange zest and roast in the oven until flavorful.

Then, portion onto toasted French baguette pieces and top with Manchego or Romano cheese and fresh basil leaf slices.

Steps to make Roasted Grape Crostini

Preheat oven

Preheat the oven to 400 °F.

Season grapes

In a 15x10x1-inch pre-greased baking pan, toss 3 cups of halved, seedless grapes with 2 tablespoons of sherry or rice vinegar, 2 tablespoons of olive oil, ½ teaspoon of salt, and ¼ teaspoon of ground pepper until well combined and coated. Spread out evenly.

Roast

Roast the seasoned grapes in the preheated oven for about 30-35 minutes until slightly softened and browned.

Add orange zest

Once roasted, gently mix in 1 teaspoon of orange zest.

Preheat broiler

Turn on the broiler.

Broil bread

Place 24 French baguette slices, cut about ½-inch thick, evenly, over an ungreased baking sheet. Broil for about 1-2 minutes per side until lightly browned.

Prepare crostini

Once toasted, top the bread slices with some warm roasted grape mixture and then sprinkle with cheese and basil.

Serve warm and enjoy!
