This Roasted Plum Breakfast Parfaits recipe is a fantastic way to use up plums. You could also use peaches or nectarines if you have a glut of those this summer. These parfaits are really versatile because they can be made ahead of time and stored in the refrigerator for up to three days.
To make this delicious parfait, start by roasting plums in the oven. To assemble the parfaits, place 2 plum wedges in the bottom of each of 6 individual glasses. Layer yogurt and granola into the jars and repeat the layers once. Top each of the parfaits with 2 more plum wedges. Drizzle with any of the remaining pan juices and sprinkle evenly with pistachios.
To make Roasted Plum Breakfast Parfaits, you will need the following ingredients:
Preheat the oven to 400 °F.
Place plum wedges, ¼ cup of orange juice, 3 tablespoons of sugar, 1½ tablespoons of butter and ⅛ teaspoons of salt in a broiler-safe baking dish. Toss gently to coat. Bake for about 20 minutes until the plums are very soft.
While the dish is still in the oven, switch the setting to broil. Broil the plums for about 4 minutes. When the pan juices are syrupy, remove the baking dish from the oven and leave to cool completely.
To assemble the parfaits, place 2 plum wedges at the bottom of each glass. Place 2½ tablespoons of yogurt on top followed by 2½ tablespoons of granola. Repeat the plum, yogurt, and granola layers and place the rest plum wedges on top.
To serve, drizzle each parfait with 1½ tablespoons of sticky pan juices. Sprinkle pistachios evenly on top.
