The Very Best Granola is great for breakfast, snacks, and even dessert. My family loves eating this granola. We enjoy it served over a homemade yogurt or with some milk and sliced bananas. And also as a topping for yogurt parfait and even ice cream. This recipe is easy and healthy. It is packed with nuts, seeds, and rolled oats. It is also naturally sweetened and even happens to be vegan.

The recipe yields a big batch of eight cups, which you can store in an airtight container and have on hand for breakfast and snacks all week-long.

Steps to make The Very Best Granola

Preheat oven and prepare baking sheet

Preheat the oven to 325 °F and line a large baking sheet with parchment paper.

Combine dry ingredients

In a large bowl, combine 4 cups old-fashioned rolled oats, 1 cup pecans, ½ cup pepitas, 1 teaspoon fine sea salt, and ½ teaspoon cinnamon and stir to blend.

Add in oil, maple syrup, and oil

Add in ½ cup coconut oil, ½ cup maple syrup, and 1 teaspoon vanilla extract and stir until well combined.

Transfer to baking sheet

Spread the granola evenly onto a prepared baking sheet.

Bake for 21-24 minutes until lightly golden, stirring halfway (for extra-clumpy granola, press the stirred granola into the baking sheet with a spatula).

Let the granola sit and harden for at least 45 minutes undisturbed. Then top the granola with ⅔ cup dried cranberries and ½ cup coconut flakes if using.

Serve

Break the granola into clusters. Serve or store in an airtight container for up to 2 weeks.
