Make sure you let the chicken breast come to room temperature. Take it out of the fridge 20 to 30 minutes before cooking. As the cold chicken cooks unevenly and tends to be tough. To make the Santa Fe Skillet Chicken, you will need the following ingredients:
Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
Season 1 pound boneless, skinless chicken breast with 2 tablespoons taco seasoning, 1 teaspoon cayenne pepper, and kosher salt to taste.
Cook chicken for about 8 minutes per side until golden and cooked through. Transfer to a plate and let rest.
In the same skillet, add 2 cloves minced garlic, 1 sliced red onion, and 2 chopped red bell peppers, and cook, stirring occasionally, for 5 minutes.
Add in 1 (15-oz) can black beans and stir until warmed through. Transfer to a plate.
Reduce the heat to low. Return the cooked chicken to the skillet and top with 2 cups shredded Cheddar cheese and bean mixture.
Cover and let the cheese melt.
