These Savory Crepes with Turkey & Mushroom make a great midweek dinner – filling and delicious – what more could you ask for? These crepes are a great way to use up leftover turkey or you could use any other leftover cooked meat that you may have hanging around.
Start by preparing the crepe batter by whisking flour, milk, water and melted butter and flavoring with parsley, basil, red pepper flakes. Cook thin crepes over low heat and keep separated while you use up all the batter. Fill the crepes with sauteed mushrooms, Swiss cheese and shredded turkey.
To make the Savory Crepes with Turkey & Mushroom, you will need the following ingredients:
Whisk 3 large eggs with 1 cup of all purpose flour, ⅔ cup milk, ⅔ cup water, 3 tablespoons melted butter, 1 tablespoon chopped fresh parsley, ¼ teaspoon dry basil
¼ teaspoon red pepper flakes, ¼ teaspoon salt and ⅛ teaspoon pepper together in a large bowl until smooth. Add the zest of one lemon and mix well.
Place a small pan over medium/low heat and add a tablespoon of butter to the pan.
Once the butter has melted, add some of the batter mixture until it almost coats the center. Lift and swirl the pan carefully until the batter reaches the sides of the pan and makes a large thin crepe. Cook for 1-2 minutes.
Using a spatula, flip the crepe to cook the other side for about another minute.
Repeat with the remaining crepe mixture. Place a silicone mat or piece of wax paper between each of the cooked crepes to prevent them sticking.
Spray a large skillet with cooking spray. Sauté 8 ounces of mushrooms and heat up 1-2 cups of cooked turkey.
Place each crepe flat on a plate. First, add two slices of Swiss cheese followed by a few spoonfuls of cooked turkey and top with some sauteed mushrooms.
Roll each crepe tightly to prevent the filling from falling out.
Serve garnished with freshly chopped parsley.
