One of the things I missed most went I went vegan was scrambled eggs. That was until I started to make these Simple Vegan Scrambled Eggs from tofu! When scrambled, tofu has a similar texture to scrambled eggs. It packs the same protein punch and you can customize it just as easily. Sometimes I add spinach and mushroom to mine, but mostly I just stick to the plain recipe below.
You can cook this tofu in oil or water, depending on your own dietary requirements. Heat the oil / water in a large pan. Add crumbled tofu and turmeric and season with salt and black pepper. Serve on freshly toasted bread and sprinkle some freshly chopped parsley on top.
To make my Simple Vegan Scrambled Eggs, you will need the following ingredients:
Break the tofu into bite-size chunks and mash it with a fork to get the scrambled egg texture.
Heat some water or oil in a large pan or skillet.
Add the tofu, turmeric, salt and pepper and stir well. Cook for 5-10 minutes, stirring occasionally.
Serve with toasted bread, garnished with freshly chopped parsley.
