Start the sauce by sautéing the onion until it is very soft and translucent. Add tomatoes and vinegar and season with salt and pepper. Stir well and bring to a boil before reducing the heat and simmering for at least 1 hour and up to 2 hours, until the sauce reaches your desired consistency. Remove the saucepan from the heat and let the sauce cool to room temperature before spreading on your pizza dough.
