These Spiced Christmas Tree Brownies are unbeatable this Christmas. They are infused with warm, seasonal spices and a dash of port. These brownies are one of my favorite recipes for Christmas desserts and they are easy to make too! Don’t worry if you don’t have any port, you can substitute with mulled wine or red wine.
Start by melting butter and chocolate over a bowl of hot water. Beat eggs, caster sugar, and vanilla extract and add the clementine zest and juice, port and spices. Mix until just combined. Combine with the dry ingredients before transferring to a baking pan. Bake the brownies in the oven. Remove from the oven and leave to cool. Decorate the brownies with icing zig zags and star-shaped sprinkles. Add a chocolate finger to make the trunk and serve once the icing has set!
To make Spiced Christmas Tree Brownies, you will need the following ingredients:
Preheat the oven to 355 °F. Line a 9-inch round springform baking pan with parchment paper.
Place 150 grams each of butter and chocolate in a heatproof bowl over a pan of simmering water. Once melted, stir until smooth and set aside to cool for 20 minutes.
In a large bowl, beat 3 large eggs, 125 grams of caster sugar and 1 teaspoon of vanilla extract using a wooden spoon. Add the zest and juice of 1 clementine, 3 tablespoons of port, ¼ tsp ground cinnamon, a good pinch of ground cloves, and several gratings of nutmeg and beat until just combined.
Sift 100 grams of flour, ¼ teaspoon of baking powder and ½ teaspoon salt into a separate bowl.
Mix the cooled melted chocolate mixture with the beaten egg mixture.
Fold in sifted flour and mix until fully incorporated.
Transfer the mixture to the prepared baking pan.
Bake in the oven for 20-30 minutes. Remove from the oven when the mixture is set on top but still slightly sticky in the center.
Leave the brownies to cool completely in the pan.
Once cool, remove the brownies from the pan and cut into triangular Christmas tree shapes.
Mix 75 grams of powdered sugar with 2 teaspoons of water. If it’s too thick, add a drop or two more water to make a runny icing.
Drizzle the icing over the brownies in a zigzag pattern. Sprinkle the star sprinkles over the top and insert a chocolate finger into the base of the triangle to create a tree trunk.
Serve once the icing has set.
