This Squash Blossom Focaccia is inspired by my travels in Italy. Prior to my Italian adventure, I thought the only way to cook squash blossoms was to stuff them with cheese and fry them but I was pleasantly surprised when I tasted a focaccia bread with squash blossoms on top.
This recipe is so simple to make. I use store bought dough which cuts the prep time considerably. Start by pressing and stretching the dough into a baking pan. If the dough springs back, leave it to rest for about 10 minutes and stretch again. Bake for 8 minutes before topping with ricotta cheese, Parmesan and squash blossoms. Return to the oven and bake for 10 more minutes.
To make Squash Blossom Focaccia , you will need the following ingredients:
Preheat the oven to 450 °F. Line with parchment paper and grease a 9 by 13-inch pan with a tablespoon of oil.
Place the store bought dough in the baking pan and press it with your fingers to create a dimple effect on the top. Stretch the dough out to each corner of the pan.
Bake in the preheated oven for about 8 minutes. Remove from the oven and place on a wire rack to cool for 5 minutes.
Spoon ½ a cup of ricotta onto bread and spread it out. Sprinkle on ¼ cup of the Parmesan and season with salt and pepper. Place the squash blossoms on top and sprinkle on the remaining cup of Parmesan.
Return to the oven and bake for 10 more minutes until golden.
Drizzle with remaining olive oil just before serving.
