1 cup Confectioners' sugar
3 tbsp Lemon juice or as necessary for consistency

To make this cake start by mixing together eggs, sugar, and sour cream. Add lemon zest and extract and mix in dry ingredients. Mix together until you have a smooth batter. Heat the oven and prepare loaf pan

Preheat the oven to 350 °F. Lightly spray a loaf pan with cooking spray.

Mix eggs, sugar, and sour cream

Place 3 large eggs, 1 cup of granulated sugar, and 1 cup of sour cream in a large bowl and whisk vigorously until smooth.

Drizzle in ½ a cup of oil while whisking constantly.
