Start with the chicken. Slice two chicken breasts into thin cutlets. If you’d prefer to not cut the chicken, you can look for pre-sliced thin chicken cutlets and pound them using the instructions below. Next, sauté the onions and mushrooms. Then, cover the inside of a teacup with a piece of chicken breast and fill it with the mushroom filling. Fold over the overhanging edges so that they seal in the filling. Finally, brush the chicken bundles with mayo and top with cheese. Bake for 25 minutes until the chicken is tender and golden on top. To make the Low Carb Stuffed Chicken Breast, you will need the following ingredients:
Use a sharp knife to slice a chicken breast lengthwise to produce three flatter chicken cutlets. Repeat with the other chicken breast.
Working with one chicken cutlet at a time, place the chicken in a plastic bag. Pound the chicken with a meat mallet to get an even thickness all around. Repeat with the remaining chicken cutlets.
In a skillet, heat 1 tablespoon vegetable oil and add 150 grams diced onions. Season with salt and black pepper. Cook the onions, stirring, until translucent.
Add 300 grams chopped mushrooms to the same skillet and cook until browned.
Preheat the oven to 350 ºF and line a baking sheet with parchment paper.
Cover the inside of a teacup with one piece of chicken breast, allowing it to overhang the edges of the cup.
Add sautéed onions and mushrooms to the cup with chicken breast and fold over the overhanging edges so that they seal in the filling. Turn the cup over onto the prepared baking sheet. Repeat with the remaining chicken cutlets and filling.
Brush the tops with mayonnaise.
Top the stuffed chicken breasts with shredded Cheddar cheese.
Transfer the baking sheet to the oven and bake for 25 minutes.
