This Sweet Chili Chicken is a delicious yet super simple midweek meal. I make this at least once a week. It is so versatile too. Sometimes I serve it with rice. If I am feeling less hungry, I make a fresh green salad to accompany the chicken. As I like a bit of heat in my food so I use a very hot chili sauce, but you can use your favorite chili sauce.
Start by making a glaze from chili sauce, honey and olive oil. Season and glaze the chicken. Cook the chicken on a hot grill pan. Grill for about 8 minutes on one side before turning each breast and finishing off by cooking the skin. I like to serve my chili chicken with lime wedges to give it a citrus zing.
To make the Sweet Chili Chicken, you will need the following ingredients:
Heat your grill to high.
Combine 3-4 tablespoons of chili sauce, 2 tablespoons of clear honey and 2 tablespoons of olive oil in a large bowl.
Take a sharp knife and slice 3-4 slits across the skin of each chicken breast. Season to taste with salt and pepper. Lift the skin on each breast and smear crushed garlic under each.
Dunk the underside of each chicken breast into the glaze until each one is evenly coated. Save the remainder of the glaze for later.
Place the chicken on the grill pan, glazed side up. Cook for about 8 minutes until sticky and golden.
Turn each of the chicken breasts over. Brush the skin with the reserved glaze and cook for 6-8 more minutes until the chicken is cooked through and feels quite firm.
Serve immediately with lime wedges.
