This fall, when pumpkins are in season, you’ve got to try this 30 minute Chicken and Pumpkin Stew. Using bite-size chunks of chicken, pumpkin and apples in a spicy stew mix, combining onion, garlic, chili flakes, smoked paprika, cumin, coriander and cinnamon, there’s not a flavor missing on your plate.
Serve it with some plain, white rice and that’s all you need!
To make Chicken and Pumpkin Stew, you will need the following ingredients:
In a large non-stick frying pan, lightly greased with a spray of oil over medium heat cook onions and garlic until softened but not browned.
Add chili flakes, smoked paprika, cumin, coriander, cinnamon and toss to combine. Cook for a few more minutes.
Add the chicken, apple chunks, pumpkin and stock, to the frying pan and bring all to a boil then turn down the heat and simmer, covered for 15-20 minutes.
Remove the lid and simmer for a further 10 minutes until the sauce has reduced and thickened.
Squeeze drizzles of lemon or lime juice, before serving with rice.
