Thai Zucchini Noodles

This Thai Zucchini Noodles is one of my favorite Asian meals to make at home. Complete with a spicy Thai sauce and topped with toasted sesame seeds. This Asian comfort food is easy to prepare and versatile too! You can add extra veggies if you like. I usually use fettuccine pasta but you can use whatever you have in the cupboard. 

Start by cooking pasta to al dente. Sauté zucchini in olive oil and sprinkle with salt. Remove zucchini and add soy sauce, honey, chicken stock, and red curry paste to the skillet. Heat up and mix everything to combine. Add chopped green onions and remove from heat. Add the cooked fettuccine to the skillet with the sauce and stir to coat. Return the cooked zucchini and mix well. Serve garnished with toasted sesame seeds.

    Cook the pasta

    Follow the package directions to cook the pasta to al dente. Remove from the heat, drain and set aside to cool.

    Sauté zucchini

    Heat 1 tablespoon of olive oil in a large skillet over high heat. Add 2 sliced zucchini and sprinkle with salt. Cook for 1 or 2 minutes, turning occasionally. Remove the cooked zucchini to a plate before it gets too soft.

    Make sauce

    Add ¼ cup of soy sauce, ¼ cup plus 2 tablespoons of honey, ¼ cup of chicken stock and 1 tablespoon of Thai red curry paste to the skillet. Heat the ingredients while stirring. Add 5 chopped green onions to the sauce and mix well. Remove from heat immediately.

    Add the cooled pasta to the skillet and stir to coat with the sauce. Add the cooked zucchini and mix well.
