I love these savory Italian inspired Tomato Basil Pastries. I eat them for breakfast if I’m on the run, as a mid-morning snack or paired with a salad at lunchtime. They are a great addition to any picnic basket or even to kids lunchboxes.

They couldn’t be simpler to make either. Start by cutting the pastry into 4 even pieces. Sprinkle with mozzarella cheese and top with slices of tomato and torn basil leaves. Fold the opposite corners of the puff pastry squares into the center. Bake in the oven until the golden brown and the cheese has melted.

Steps to make Tomato Basil Pastries

Heat oven and prepare a baking sheet

Preheat the oven to 400 °F. Line a baking sheet with a silicone baking mat or parchment paper.

Prepare pastry squares

Cut a sheet of puff pastry into 4 squares.

Place cheese on pastry

Sprinkle 2 tablespoons of mozzarella cheese along the diagonal center of each one pastry square.

Add tomato and basil

Arrange slices of tomato and torn basil leaves on top of the cheese.

Fold pastry

Bring the opposite corners of the pastry squares together at the center.

Brush with egg and season

Brush the exposed puff pastry with beaten egg. Season with salt.

Bake the pastries in the oven for 10-13 minutes until golden brown.
