200g Couscous
2 tsp Vegetable stock or use a cube
250g Cherry tomatoes halved
2 Avocado peeled, stoned and chopped
150g Mozzarella drained and chopped
handful Rocket or young spinach leaves
For the dressing:
1 tbsp Pesto rounded
1 tbsp Lemon juice
3 tbsp Olive oil
to taste Salt
to taste Bell pepper

This Tricolore Couscous Salad is a wonderful, fresh and vibrant bowl of Italian salad ingredients including cherry tomatoes, avocados and chopped mozzarella, tossed with rocket or baby spinach and fluffy couscous; and coated in a pesto, lemon juice and olive oil dressing for flavor and excitement. A quick lunchtime salad that can be prepared in just 15 minutes.

Steps to make Tricolore Couscous Salad

Cook couscous

In a large bowl, stir the couscous with vegetable stock and 300ml boiling water, to mix. Cover and set aside for 5 mins, to cook.

Prepare dressing

In a small mixing bowl, stir the pesto and lemon juice together with some salt and pepper to taste. Slowly add the oil until well combined.

Dress couscous

Pour the dressing over the couscous and toss to mix through.

Add salad ingredients

Add the tomatoes, avocado and mozzarella to the salad and mix well before gently stirring in the rocket or spinach.

Serve

Serve immediately.
