Tuscan Tuna and White Bean Salad
Inspired by travels in Tuscany, I love this light and healthy Tuscan Tuna and White Bean Salad. I like to use canned cannellini beans for this recipe – they are really creamy and delicious and pair wonderfully with the strong flavor of arugula and the salty tuna.
To make this salad, start by combining arugula with white beans, tuna, tomatoes, olives and red onion. Drizzle the ingredients with olive oil and lemon juice and toss to combine. Before serving, top the salad with crumbled feta cheese and season to taste with kosher salt and black pepper.
