My kids’ favorite dinner is this Unfried Chicken. All the good flavors from a fried chicken recipe, only, I choose to bake them and not fry them, making dinner just that little bit healthier!
The trick to the best crispy flavored breaded chicken is the hot pepper sauce mixed with the buttermilk. It really is just 1 tablespoon, however, if you find this too strong, you can reduce the portion to a teaspoon size. Keep it healthy by chopping potatoes for oven-baked fries and a portion of freshly cooked vegetables! Winner, Winner, Chicken Dinner!
To make Unfried Chicken, you will need the following ingredients:
In a bowl, stir together the buttermilk and the hot sauce. Add the chicken and stir to coat. Marinate chicken for at least 1 hour, in the fridge.
Lightly grease a baking sheet.
In a large, shallow bowl, mix together the panko bread crumbs, Parmesan cheese, onion powder, garlic powder, cayenne pepper, and paprika.
Remove the chicken from the marinade, shaking pieces to remove the excess moisture. Discard the remaining marinade. Gently press the chicken pieces into the panko mixture to coat. Gently toss between between your hands, so that any breadcrumbs that haven’t stuck can fall away. Arrange breaded chicken onto the prepared baking sheets and refrigerate for at least 30 minutes.
Preheat the oven to 400°F.
Lightly coat chicken pieces with cooking spray. Bake the chicken in the preheated oven for about 10 minutes, until browning on top. Flip the pieces and continue baking for a further 10 minutes more, until the chicken is cooked through and the coating is crisp.
Serve hot!
