Ingredients

400 g can Chickpeas rinsed and drained
1 Red onion small , roughly chopped
1 clove Garlic chopped
handful Parsley of flat leaf or curly parsley
1 tsp Cumin ground
1 tsp Ground coriander
1⁄2 tsp Chili powder or harissa paste
2 tbsp Plain flour
2 tbsp Sunflower oil
To serve:
Pitta bread toasted
200 g tub Tomato salsa
Green salad

    Vegan Falafel Burgers are one of my favorite healthy burger recipes. I love falafel – bursting with flavor and goodness. Falafel is a really common form of street food which is eaten throughout the Middle East. The chickpea and herb mixture is fried until crispy on the outside and soft on the inside. 

    It couldn’t be easier to make this recipe for falafel burgers. Start by draining and drying a can of chickpeas. Mix all the remaining falafel ingredients in a food processor and blend until smooth. Shape the mixture into 4 patties. Fry until crispy on the outside and smooth on the inside. Serve in toasted pitta breads with tomato salsa and green salad. Enjoy!

    Steps to make Vegan Falafel Burgers

    Drain and dry chickpeas

    Drain 400 grams of chickpeas and pat them dry with kitchen paper.

    Make the falafel mixture

    Place the dried chickpeas in the bowl of a food processor with 1 small roughly chopped red onion, 1 garlic clove, handful of flat leaf parsley, 1 tsp ground cumin, 1 tsp ground coriander, ½ tsp harissa paste or chili powder, 2 tbsp plain flour and a little salt. Blend until smooth.

    Shape patties

    Shape the mixture into four patties using your hands.

    Heat 2 tablespoons of sunflower oil in a large non-stick skillet. Add the falafel burgers and fry quickly for 3 minutes until lightly golden on each side.

    Serve within toasted pitta bread with tomato salsa and a green salad.
