I am trying to get my family to eat more vegetables and this Veggie Mediterranean Quiche has turned out to be a real winner in my home. I love it because it’s so easy especially because I buy a prepared pie crust. This recipe uses sun-dried tomatoes. In the store, you can usually find two types of sun-dried tomatoes: dry ones or ones packed in olive oil. You can use either for this recipe. If you use dry ones, rehydrate them with water. If you get oil-packed ones, simply remove them from the oil before using.
Make a spinach and onion filling for the quiche by sautéing onion, garlic, red pepper, spinach, olives, oregano, parsley and feta. Whisk up a filling from eggs, milk and cheddar cheese. Pour the egg mixture over the spinach filling and bake in the oven for 50-55 minutes.
To make my Veggie Mediterranean Quiche, you will need the following ingredients:
Preheat oven to 375 °F and fit a 9 inch pie plate with the prepared pie crust. Set to one side until you are ready to use it.
Chop ½ cup of sun-dried tomatoes.
In a large skillet, fry the diced onion and 2 minced garlic cloves in 2 tbsp of melted butter over medium heat for about 3 minutes until fragrant and tender.
Add the diced red pepper and cook for 3 more minutes until the pepper is just tender.
Add 2 cups of spinach, ¼ cup of olives, 1 tsp of oregano, and 1 tbsp of parsley. Cook for about 5 minutes until the spinach is wilted (if using fresh) or heated through (if using frozen).
Remove the filling from the heat and stir in ⅓ cup of feta cheese and ½ cup of chopped sun-dried tomatoes. Set aside to cool.
Whisk the 4 eggs, 1 ¼ cups of milk, salt, and pepper, and ½ cup of the Cheddar cheese together in a medium-sized mixing bowl.
Place the cooled filling in the prepared pie crust and spread it out evenly.
Pour the egg mixture over the spinach and onion mixture in the pie crust. Sprinkle the remaining ½ cup of cheddar cheese on top.
Bake the quiche for 50-55 minutes until the filling is set and the crust is a golden brown color.
Cool for 10-15 minutes. Slice and serve.
