In this Walnut and Cranberry Pie the pairing of the two star ingredients, walnuts and cranberries, could not taste better.
With a golden crust, decorated perfectly over your pie, serve it at your festive Christmas dinner and watch for the smiles of delight. Served with custard or ice cream, this pie tastes even better than it looks. Trust me on this one!
To make Walnut and Cranberry Pie, you will need the following ingredients:
Line a 9-inch pie dish with double-crust for pie, trim to 1-inch over the edge of the plate and set remaining pastry aside. Refrigerate pie crust until ready to fill.
In a large saucepan, stir cornstarch, water, sugar, corn syrup and lemon zest until combined and smooth. Bring to a boil over medium heat.
Add cranberries and raisins and cook while stirring for 4-6 minutes until the berries begin to pop.
Remove saucepan from heat and fold in butter and walnuts. Cool completely.
Fill pie crust with prepared fruit and nut filling. Roll out remaining pastry and cover the pie with a decorative crust and seal the edges.
Bake in the oven at 425 °F for 30-40 minutes until filling is bubbling and the crust is golden brown.
Allow to cool completely before serving.
