This Watermelon Blueberry Salsa is a delicious fruity yet savory sauce, perfect for a hot summer day. This salsa is so quick to make if you use a food processor to do the chopping. Don’t worry if you don’t have one – you can get the same effect when you hand chop.
To make this delicious fruity salsa, start by combining tomatoes, onion, and jalapeno in the bowl of a food processor. Pulse briefly to chop finely. Transfer the tomato mixture to a medium bowl and stir in watermelon, blueberries, cilantro, lime juice, and salt. Cover the bowl and place in the refrigerator for a minimum 30 minutes to allow the flavors to develop.
To make Watermelon Blueberry Salsa, you will need the following ingredients:
Place 4 small tomatoes, ½ a small onion, and a chopped jalapeno in the bowl of a food processor. Pulse briefly until the mixture is finely chopped.
Transfer the tomato mixture to a medium serving bowl.
Stir in 1 cup of diced watermelon, ½ a cup of fresh blueberries, 3 tablespoons of chopped fresh cilantro, 3 tablespoons of lime juice, and ¼ teaspoon of salt.
Cover the bowl and place in the refrigerator for a minimum of 30 minutes.
Serve chilled.
