I always feel so accomplished when I find great tasting vegan substitute recipes and this Whole Grain Vegan Plum Muffins recipe is a real winner.
Never feel like you’re missing out on those tasty treats with this recipe. All the goodness and none of the junk, using oat flour, coconut sugar and almond milk. Healthy no longer needs to taste like cardboard and we’ve proven it with this one!
To make Whole Grain Vegan Plum Muffins, you will need the following ingredients:
Preheat the oven to 350 °F and lightly grease or line a 12-muffin baking sheet with liners or pieces of parchment paper.
Cut plums in half and remove the inner pits. Thinly slice 1 or 2 plums to create 12 thin slices and use as toppings for the individual muffins.
Chop up the remaining plums to give you a portion of about 1½ cup chopped fruit.
In a large bowl, mix both flours together with cornmeal, sugar, baking soda, baking powder, cinnamon and ½ teaspoon salt.
In a separate bowl, gently whisk the flax seeds, non-dairy milk and oil together until combined.
Pour the wet ingredients into the dry ingredients bowl and mix well until just combined. Do not overwork the mixture.
Gently fold the chopped plums into the batter.
In a small bowl, combine the flour, rolled oats, vegan butter, brown sugar, cinnamon and salt, together, for the streusel topping. Using your fingers, mix and crumble the ingredients, evenly until the butter is the size of a pea or smaller. Set aside.
Divide the batter into 12 prepared muffin tins or liners and top each one with a plum slice. Sprinkle streusel topping over individual muffins.
Bake in preheated oven for 25-28 minutes until the tops are firm and lightly golden. You may need to rotate the baking sheet, once, halfway through the baking process.
Allow to cool on a wire rack before serving warm or at room temperature.
