For the muffins
4-5 medium sized Plums
1 cup Oat flour
¾ cup Spelt flour whole wheat, all-purpose, or gluten free all-purpose flour
½ cup Cornmeal
½ cup Coconut sugar cane sugar, or demerara sugar
1 tsp Baking soda
1 tsp Baking powder
½ tsp Salt
½ tsp Cinnamon
1 tbsp ground flax seed, mixed with 3 tablespoons warm water Water
1⅓ cups plain Almond milk or soy milk
6 tbsp Vegetable oil
For the streusel topping (optional)
¼ cup Spelt flour whole wheat, all-purpose, or gluten free all-purpose flour
2 tbsp Rolled oats
1½ tbsp Vegan butter chopped into small pieces
1½ tbsp Coconut sugar brown sugar, cane sugar, or demerara sugar
a pinch Salt
a pinch Cinnamon

Preheat oven and prepare baking pan

Preheat the oven to 350 °F and lightly grease or line a 12-muffin baking sheet with liners or pieces of parchment paper.

Slice plum toppings

Cut plums in half and remove the inner pits. Thinly slice 1 or 2 plums to create 12 thin slices and use as toppings for the individual muffins.

Chop plums

Chop up the remaining plums to give you a portion of about 1½ cup chopped fruit.

Combine dry ingredients

In a large bowl, mix both flours together with cornmeal, sugar, baking soda, baking powder, cinnamon and ½ teaspoon salt.

Combine wet ingredients

In a separate bowl, gently whisk the flax seeds, non-dairy milk and oil together until combined.

Combine all ingredients

Pour the wet ingredients into the dry ingredients bowl and mix well until just combined. Do not overwork the mixture.

Add plums

Gently fold the chopped plums into the batter.

Streusel topping

In a small bowl, combine the flour, rolled oats, vegan butter, brown sugar, cinnamon and salt, together, for the streusel topping. Using your fingers, mix and crumble the ingredients, evenly until the butter is the size of a pea or smaller. Set aside.

Prepare muffins for baking

Divide the batter into 12 prepared muffin tins or liners and top each one with a plum slice. Sprinkle streusel topping over individual muffins.

Bake

Bake in preheated oven for 25-28 minutes until the tops are firm and lightly golden. You may need to rotate the baking sheet, once, halfway through the baking process.

Allow to cool on a wire rack before serving warm or at room temperature.
