These Yummy Pikelets are sweet, little dough cakes that are famously eaten at royal, high tea parties. Made from a soft batter that needs just a handful of ingredients, simply beaten together and then shaped into mini rounds and cooked in a pan, similar to pancakes.
Perfectly tasty as they’re made or you can explore with your favorite fruit toppings or chocolate spreads and jams.
To make Yummy Pikelets, you will need the following ingredients:
In a medium mixing bowl, sift 1 cup of self-rising flour and stir in 1 tablespoon of caster or superfine sugar.
Separate a “well” in the center of the dry ingredients and crack open an egg.
Use a wooden spoon to combine ingredients while slowly pouring in ½ cup of milk and continuously stirring. Add more milk to reach your preferred consistency of a thick or thinner batter to make a thick or thinner pikelet.
Pour in 1 tablespoon of melted butter and beat until smooth.
Heat a skillet over medium heat and grease with some cooking spray. Working in batches, add large spoonfuls of batter to the hot skillet about 2-inches across. Cook until gently bubbling then flip and cook until browned on the other side.
Best served warm!
