2 cups Macaroni dry elbow, cooked, rinsed, and drained
⅓ cup Celery diced
¼ cup Onion soaked in cold water for 5 minutes, drained and minced
1 tbsp Parsley flat-leaf, minced
½ cup Tomatoes vine-ripened, diced (optional)
½ cup Mayonnaise prepared
¾ tsp Mustard powder
1 ½ tsp Sugar
1 ½ tbsp Apple cider vinegar
3 tbsp Sour cream
½ tsp Kosher Salt plus more to taste
Black pepper freshly ground

Mix salad ingredients

In a large bowl combine the macaroni, celery, onion, parsley and tomato, if using.

Prepare dressing

In a small bowl, whisk together the mayonnaise, mustard, sugar, vinegar, sour cream and salt.

Combine salad and dressing

Pour the dressing over the salad and stir to combine. Season with salt and pepper to taste.

Serve. Store covered in the refrigerator, for up to 3 days.

Very filling it's not your average lightweigh salad, this is more like a full on lunch which is perfect for when you work all day :) I recommend adding a few cucumbers too for a crunch.
