This Apricot Strawberry Coconut Smoothie is super simple to prepare, looks vibrant, and tastes absolutely delicious. In this versatile recipe, you can substitute the strawberries with 1 cup of blueberries. I include a teaspoon of flax oil, too, as it adds Omega 3 to the smoothie.  

It’s so quick and easy to make this smoothie too! It will take less than 5 minutes to whizz everything together. Simply place coconut water, strawberries, apricots, pineapple and flax seed oil in a food processor or blender. Blend until completely smooth. Pour and enjoy!

Place ingredients in blender

Place 1 cup of cold coconut water or cold filtered water in a food processor or blender with 1 cup of hulled strawberries, 2 cups of pitted apricots, 1 cup of frozen pineapple and 1 teaspoon of flaxseed oil.
