If you don’t have in-season tomatoes, swap them out for canned tomatoes. This flavorful dish is great warm or at room temperature. And it will keep in the fridge for up to 3 days. To make the Authentic Greek Green Beans, you will need the following ingredients:
In a large skillet over medium heat, heat ⅓ cup extra-virgin olive oil and add 1 chopped onion. Sauté, stirring occasionally, until translucent and soft, about 5 minutes.
Add the chopped potatoes and let them heat for 2-3 minutes.
Add 1 pound green beans and toss until covered with olive oil.
Add the chopped tomatoes, ¼ cup chopped parsley, 1 teaspoon sugar if using, and ½ teaspoon salt and freshly ground black pepper and mix to combine.
Add enough hot water to just half-cover the green beans.
Gently simmer, covered, until there’s no water left and the beans and potatoes are soft, about 40 minutes.
Serve warm or at room temperature with bread and feta cheese.
