To make Autumn Apple Chicken, you will need the following ingredients:
In a large skillet, over medium heat, heat oil and add chicken thighs. Season both sides with salt and pepper and cook until lightly browned.
Transfer browned chicken to a slow cooker and top with chopped apples.
In the same skillet that the chicken was cooked in, add the onions and cook, while stirring, for 2-3 minutes until softened.
Add minced garlic to the onions and cook for another 1 minute.
Add the barbecue sauce, apple cider and honey and stir together, to mix. Increase the heat to medium-high and cook for 1 minute, loosening any browned bits from the bottom of the pan.
Pour the cooked sauce over the chicken thighs and apples and cook, covered, on low for 3.5-4.5 hours until the chicken is cooked through and tender.
Enjoy served hot with a side of your choice.
Cool mixture, transfer to freezer containers and store in the freezer. To serve, partially thaw in the refrigerator overnight before heating through in a saucepan.
