Preheat oven and prepare loaf pan

Preheat the oven to 325 °F and line a 9×13-inch loaf pan with parchment paper.

Combine wet ingredients

In a bowl of a stand mixer, combine 3 eggs, 1 tablespoon sugar, ½ cup vegetable oil and mix for 5 minutes.

Add zucchini, bacon and cheese

Using a wooden spoon, fold in 1 cup shredded zucchini, 1 cup cooked chopped bacon, and 1 cup grated Cheddar cheese.

Add milk

Add in 6 tablespoons milk and mix to combine.

Combine dry ingredients

In another bowl, mix together 1 ½ cups all-purpose flour, ½ teaspoon baking soda, ½ teaspoon baking powder, a pinch of salt, and 1 teaspoon black pepper.

Add dry ingredients to wet mixture

Slowly add dry ingredients to the wet mixture and mix to combine. Don’t overmix.

Pour batter into loaf pan

Pour the batter into the prepared loaf pan.

Bake for 1 hour 20 minutes or until the skewer inserted in the center comes out almost clean. Cover loosely with foil if the top gets too brown.
