Ingredients

1 stick Unsalted butter plus more for the baking dish
6 slices Bacon thick-cut, chopped
2 Onion large, chopped
1 bunch Scallions thinly sliced (white and green parts separated)
1 tbsp Rosemary chopped, fresh
3 cups Chicken broth low-sodium
2 Large eggs
1 cup Parmesan cheese grated
½ cup Parsley chopped, fresh
Kosher Salt
Black pepper ground
1 stale 2-pound loaf Bread crusty white bread, cut into ½-inch cubes (about 16 cups)

Bacon and Parmesan are two words that I love to see together in any recipe, so it’s no wonder that Bacon-Parmesan Stuffing is flying to the top of my Thanksgiving cooking list this year!

To make this stuffing, start by crisping bacon and adding butter to cook the onions, scallion whites and a pinch of salt. Next add rosemary and chicken broth and bring to a simmer, before removing from the heat. Whisk together eggs, Parmesan, parsley, pepper and scallion greens. Stir in bread cubes and the bacon and onion mixture. Bake in the oven until golden and crisp on top.

Steps to make Bacon-Parmesan Stuffing

Heat oven and prepare baking dish

Preheat the oven to 375 °F and lightly grease a 3-quart baking dish with butter.

Cook bacon

Fry the bacon over medium-high heat in a large nonstick skillet until crisp.

Melt butter

Melt 6 tablespoons of butter in the same large skillet.

Cook onions

Add the chopped onions, scallion whites and a pinch of salt. Cook while stirring for about 5 minutes, until the onions are soft and tender. Stir in 1 tablespoon of chopped rosemary.

Add broth

Add 3 cups of chicken broth and 1 teaspoon of salt. Bring the mixture to a simmer, before removing from the heat.

Whisk eggs

Whisk two eggs together in a large bowl. Add 1 cup of Parmesan, ½ a cup of parsley and 1 tablespoon of ground black pepper. Stir in all the scallion greens but hold back 2 tablespoons for garnish.

Add bread and bacon mixture

Stir the bread cubes and bacon mixture into the egg mixture.

Transfer stuffing to baking dish

Transfer the stuffing mixture to the prepared baking dish. Dot the top of the stuffing with the remaining 2 tablespoons butter and cover the dish with foil.

Bake

Bake in the oven for 30 minutes. Remove the foil and return to the oven to bake for 20-30 more minutes until browned on top.

Serve

Sprinkle with the reserved scallion greens before serving.
