These Baked Hasselback Potatoes are simple potatoes scored thinly and the secret is to not cut right the way through so the potatoes stay intact.

A super easy side dish that you can have readily available and no one will ever know. With a delicious, golden, crispy outer skin and a soft center, loaded up with double brushings of infused oil.

    Preheat oven and prepare baking sheet

    Preheat the oven to 220 °C and line a baking sheet with baking parchment paper.

    In a small mixing bowl, whisk olive oil, rosemary, lemon zest and garlic until combined. Generously brush hasselback potatoes with oil dressing.
