8 Chicken thighs on the bone, skin removed
2 tbsp Lemon juice plus wedges to serve

1 large knob Butter

125 g Plain yogurt full-fat
4 cloves Garlic large, minced
thumb-sized piece Ginger peeled and chopped
½ - ¾ tsp Hot chilli pepper powder
1 tsp Cumin powder
1 tsp Garam masala
1 tbsp Vegetable oil

BBQ Tandoori-style Chicken

BBQ tandoori-style chicken is a firm favorite in my house. This traditional Indian dish is famous all over the world. Tandoori gets its name from the clay cylindrical oven it cooks in: a tandoor. Tandoori chicken is a dish which requires marinating chicken in yogurt and spices before cooking it in a tandoor or on a barbecue if you don’t have a tandoor handy!

Start by marinating the chicken thighs in lemon juice and salt. Before marinating, slash each thigh three times down to the bone. This will encourage the thighs to cook more quickly and evenly. Make a yogurt marinade by combining yogurt, garlic, ginger, chilli powder, cumin, garam masala and vegetable oil. Marinate the chicken overnight before cooking on the barbecue or grill. Serve with melted butter and lemon wedges.

Marinate chicken with lemon and salt

Use a sharp knife to slash 3 deep slices into the thighs. Cut right down to the bone to allow the marinade to seep right in. Toss the thighs with 2 tablespoons of lemon juice and 1 teaspoon of salt in a bowl and leave to marinate for 1 hour.

Make marinade

In a small bowl, combine 125 grams of yogurt with 4 minced garlic cloves, chopped ginger, ½ - ¾ tsp red chilli powder, a teaspoon each of cumin powder and garam masala, and 1 tablespoon of vegetable oil. Mix until smooth. Pour the marinade over the chicken. Cover and leave to marinate for a minimum of 3-4 hours in the refrigerator (overnight is best).

Heat barbecue or grill

Heat your barbecue to a medium-high heat. If you prefer to cook indoors, heat the grill to its highest setting and line a baking sheet with foil.

Cook the chicken

Cook the marinated chicken on the barbecue, turning often, for 20-25 minutes until the outside is charred and cooked through. If you are using a grill, place the marinated chicken on the foil-lined baking sheet and cook under the grill for 20-25 minutes until charred all over and cooked through.

Serve

Top the chicken with butter and leave to melt. Serve with lemon wedges.
