These Traditional British Shrove Tuesday Pancakes aren’t just for Shrove Tuesday! I like to make these at any time of year. They are so simple to make. Just remember that these are not fluffy American style pancakes, they are thin like French crepes! Yum!
Start by making a typical pancake batter from flour, salt, egg and milk. Cook the pancakes in a skillet with melted butter. To serve, drizzle the cooked pancakes with fresh lemon juice or sprinkle with sugar and roll or fold to eat immediately. If you like to all eat together, keep the pancakes on a plate over a pan of simmering water to keep warm, then add the lemon juice and sugar when you are ready to serve.
To make the Traditional British Shrove Tuesday Pancakes, you will need the following ingredients:
Sift ¾ cup and 2 tablespoons of flour and ⅛ teaspoon of salt into a large bowl.
Make a well in the center of the sifted flour and add 1 beaten egg.
Stir in 4 ounces of milk and work in the flour gradually. Beat well and add the remaining 4 ounces of milk and 2 tablespoons of liqueur or water.
Transfer the batter to a jug and leave to stand for at least 15 minutes.
Heat a nonstick frying pan over medium high heat. Add a little bit of the butter and melt in the center of the pan.
Stir the batter in the jug. Pour a small amount of batter into the butter in the pan. Swirl it so that it spreads into a thin layer. Cook for about one minute on one side. Flip and cook the other side for about 30 seconds.
Continue adding a little knobs of butter to the pan and repeat until you have used all of the batter.
Place each pancake on a plate, drizzle with juice from a fresh lemon, sprinkle with sugar then roll or fold to eat immediately.
Serve immediately.
