Ingredients

4 tbsp (½ stick) Unsalted butter plus more for pan
1 head Cauliflower medium (about 2 lbs), cored and sliced ¼-inch thick
1 head Broccoli large (about 1½ lbs), trimmed and sliced ¼-inch thick
6 tbsp All-purpose flour
3 cups Whole milk
¼ tsp Ground nutmeg freshly
8 oz Gruyère cheese grated
Kosher Salt to taste
Black pepper to taste

This Broccoli and Cauliflower Gratin is one of my all-time favorite Christmas side dish recipes. It is not only easy to make, it’s really tasty too. I love this because I can make it in advance and simply cook it in the hot oven when I am ready to serve dinner.

Start by making a roux from butter and flour. Carefully whisk in milk. Simmer until the sauce thickens slightly. Remove from heat. Add nutmeg and cheese. Season to taste and pour over the vegetables in a prepared breaking dish. Sprinkle remaining cheese on top. Bake in the oven until golden brown on top and leave to stand for 10 minutes before serving.

Steps to make Broccoli and Cauliflower Gratin

Heat oven and prepare baking dish

Preheat the oven to 375 °F. Lightly butter a baking dish.

Place vegetables in baking dish

Place the cauliflower and broccoli in the baking dish.

Make roux

Melt 4 tablespoons of butter in a saucepan. Add 6 tablespoons of flour to the saucepan and stir to make a paste. Continue to cook for about 2 minutes.

Make sauce

Gradually whisk in 3 cups of milk. Simmer for 3-4 minutes, while whisking occasionally, until the sauce thickens slightly. Remove the saucepan from the heat.

Add nutmeg and cheese

Add ¼ teaspoon of nutmeg and 1¼ cups of the Gruyère cheese. Season to taste with salt and pepper.

Assemble gratin

Pour the sauce over vegetables in the baking dish and scatter the remaining ¾ cup of cheese over the top.

Bake

Cover the baking dish loosely with aluminum foil. Bake for 15 minutes. Remove from the oven and take off the foil. Return to the oven and bake for 20-25 more minutes until the vegetables are tender and the top is golden brown.

Leave to stand for around 10 minutes before serving alongside your Christmas dinner.
