This delicious Keto Broccoli and Cheese Brunch Casserole is my favorite way to feed a crowd. It’s got all my favorite breakfast components: a little pork sausage, a little egg, a little veggies, and a lot of cheese. Simple, but perfect!
Not only is the recipe super forgiving, but it is crazy versatile too. You can replace the ingredients with whatever you prefer or might have on hand. Not a fan of broccoli? Try spinach or peas, or feel free to insert your favorite vegetable instead. Does it have to be pork sausage? Nope! You can add ground chicken, turkey, or beef. Just remember to add some poultry seasoning and ground fennel to give it that sausage flavor.
To make the Keto Broccoli and Cheese Brunch Casserole, you will need the following ingredients:
In a large deep skillet, place 8 ounces pork sausage. Cook over medium high heat until browned evenly. Drain excess oil, crumble the meat and set aside.
Preheat the oven to 350 ˚F and lightly grease a 7x11-inch baking dish.
In a bowl, mix cooked sausage, 10 ounces chopped broccoli, and ½ cup Cheddar cheese.
In a separate bowl, mix together ½ cup Cheddar cheese, 1 cup ricotta cheese, 8 eggs, ¼ cup milk, 1 teaspoon ground black pepper, and ½ teaspoon salt.
Spoon the sausage mixture into the prepared baking dish and spread the egg mixture evenly over the sausage mixture. Scatter the remaining Cheddar cheese over the sausage mixture and arrange tomato slices on top.
Cover with aluminum foil and bake for 30 minutes. Then uncover and bake for 15 minutes more.
Let stand for 10 minutes before serving and enjoy!
